Learning Outcomes

By the end of this module you will be able to:

  • Understand where to find data on pesticides and pesticide laws around the world
  • Interpret data sources on foodborne illness and GMOs
  • Understand different forms of fruits and vegetables and how they can contribute to human health
  • Define food safety and explain some major global food safety concerns

Food safety is an understudied, under-resourced area of research and policy in most parts of the world. People are rightly concerned with how safe their food supply is, and what the threats are to the food supply, such as foodborne illness and pesticide residue. How can food safety be improved, and food waste be reduced? Are there other formats of foods besides “fresh” that can reduce food waste and improve food safety? Are genetically modified foods safe to eat? There are many aspects of foods that matter our health besides just the nutrient content.
